I never grill chicken or poussins without marinating them first. This marinade is super-easy and extremely delicious. I learned it from a chef I crossed paths with in the Wichian Buri district in the north of Thailand (where they’re famous for grilled chicken). At this one eatery, they grill up to 3,000 chickens a day!
Once you’ve got the marinade down, you’re ready to make my grilled spring chicken.

Ingredients
7 tablespoons brown sugar
200g evaporated milk (I recommend Carnation brand)
3 teaspoons ground white pepper
3 tablespoons oyster sauce
1 tablespoon light soy sauce
1 teaspoon seasoning sauce
1/2 teaspoon rice wine
1/2 teaspoon sesame oil
1/2 teaspoon fried garlic
1 teaspoon chicken stock powder (I recommend Knorr brand)
2 teaspoons turmeric powder
Method
- Mix all of the ingredients together in a bowl and stir until the sugar has dissolved.
- Marinade the chicken in the sauce for 15-20 minutes.
